The Oklahoma smash burger, also known as the Oklahoma fried onion burger or “Okie Burger,” is thought to have originated in the 1920s in El Reno, Oklahoma City, during the Great Depression. The burger was created when cafes needed to stretch their beef budget, and found that pressing ground beef with thinly sliced onions tasted good.\n

The onions are fried on the grill to give them a caramelized taste and crispy texture, and the burger is smashed down with the back of a spatula while on the grill, causing the Maillard reaction, which browns the meat and gives it a deep, savory flavor and American mustard on top to balance the sweetness.\n
